I’m trying to eat a healthier, lower fat breakfast. I have never had a very enthusiastic relationship with cereal, but I’m having another go.
I had a small box of leftover, slightly stale muesli at home. Someone suggested I refresh it in the oven, which I did, and I actually ate it! Most strange.
So I thought I’d better go buy some more muesli, then remembered I had unloved oats, dried fruit, nuts etc at home. Last night I combined a bunch of things from the pantry and made my own toasted muesli. This morning I ate some. YUM! I actually wanted more! Usually I struggle to finish the last few spoonfuls. So why do I like this I wonder? It’s very freshly toasted, which gives good flavor and texture. I know exactly what is in it, which doesn’t include coconut. The test will be whether I keep eating it. At least now I know I can refresh it if I’m too slow to get through it.
Wot is in it? All quantities rather approximate:
3.5c rolled oats
1c puffed wheat
1c nuts chopped- almond, cashew, walnut
2T sesame seeds
Shy half cup honey
1.5T macadamia oil
1c chopped dried fruit- raisins, cranberries
Heat honey and oil slowly to combine, toss with grain/nuts/seeds
Put this mix to greased oven trays. 15min at 150C
Cool, mix in fruit.
